This is our spin-off of the classic rice crispy treats, adding a little extra CRUNCH with nutritional benefits! This is one of those recipes I’d say not to leave any of the ingredients out. These bars are crunchy, crispy, smooth and creamy all in one bite — and that’s because of the crunch of the rice cereal, roasted whole hemp seeds, & roasted coconut — & the smoothness of the creamy milk & dark chocolate & wow butter mixed all together...
It’s so easy to make! And has been one of my go-to snacks all week. You guys should know by now that one habit of mine is to make a homemade snack on the weekend that the family and I can enjoy in the week.
Place parchment paper in a baking dish or deep baking tray & set aside.
Place parchment paper in another baking tray and set aside.
In a large mixing bowl, pour in rice cereal and roasted hemp seeds from @canmarfoods and set aside.
Dice fresh coconut into small pieces & place onto parchment paper to roast in oven for 2 minutes or until they change colour & are a little crispy.
On the stovetop combine chocolate, butter, maple syrup, coconut oil, wow butter and heat until melted, whisking together.
Pour the chocolate mixture over the crispy rice cereal & hempseed and mix until combined. Pour mixture on parchment paper and press until evenly spread. Garnish with roasted coconut.
Place dish or tray in the fridge for at least 1 hour to allow it to set before slicing.
Store in airtight container on the countertop up to 2 weeks. But I guarantee they’ll be done way before then.
