Kid-Friendly Jerk Seasoned Skewers
The combination of summer pineapples, zucchini, and ripe plantain are so fresh, perfectly sweet, and savory at the same time. The other component of the ingredient list that I love is the kid-friendly jerk seasoning I dipped my diced chicken breast in. I often forget how home-cooked sauces and marinades splendidly arrive on the taste buds. Lastly, the grill taste ties everything together and makes for a truly lovely quick kid-friendly summer dinner.

Total Time 30 mins
- 2 large crispy sweet peppers or 4-5 mini pointed sweet peppers
- 1/2 tsp fresh ginger
- 2-3 garlic cloves
- 1 tbsp garlic powder
- 1 tsp paprika
- 2 tsp onion powder
- 2-3 tsp fresh thyme leaves without the stems
- 3-4 tsp molasses
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp ground cinnamon
- 1 sliver scotch bonnet pepper just for taste (optional ingredient -- heat rating of 80,000-400,000 Scoville units)
- 3-4 pimento
- 1 tbsp avocado oil
- 1 tbsp water
- 1 tsp apple cider vinegar
Skewer
- 1 chopped zucchini
- 1 fresh or canned pineapple
- 1 ripe plantain
Combine all ingredients; blend in a blender until liquid form and pour in a mason jar.
Marinade chicken in the jerk seasoning for a few minutes or overnight.
Store the remainder of seasoning in the refrigerator for use at another time.
