Need a mid-day snack to get you through the rest of the weekdays? Well, our LOADED CHOCOLATE CHIP COOKIES is just what you need. Made with creamy vegan butter, chia seed, hempseed from CanMarFoods.com, oats, raisins, and pure maple syrup — these cookies are healthy and did I say smooth and delicious. And you only need a couple bowls, a spoon, and a whisk — no electric mixer! Perfect weekend goal or for when the kiddos go to bed tonight.
1 egg OR you can make a flax egg: mix 1 tbsp milled flaxseed from CanMarFoods.com with 3 tbsp of water with a whisk and set in the fridge for 15 minutes.
1 tsp pure vanilla extract
Preheat oven to 350ºF.
Line baking sheets with parchment paper & set aside.
In a large mixing bowl whisk together flour, oatmeal, raisins, chia & hemp seed, baking powder, baking soda, chocolate chips, & salt.
In a medium mixing bowl whisk butter until smooth.
Add maple syrup, vanilla, & egg [or flax egg] to bowl with butter & whisk until creamy.
Add butter mixture into flour mixture & combine. Batter will be thick & sticky. Finish off by hand mixing to ensure ingredients are well combined.
Spoon batter onto parchment paper & press down w/ fingers or w/ a fork (add extra chocolate chips on top ).
Bake on 350ºF for 20 minutes or until lightly browned on edges. Start eyeing them at 15 minutes.
Let cookies cool & store in airtight container on the countertop up to 2 weeks. But I guarantee they’ll be done way before then.
