It’s March! My birth month and it also happens to be National Nutrition Month! How are your wellness goals coming along? Are you eating a variety of nutritious foods every day? How’s the meal planning going? What about those cooking skills – are you taking risks like I am and cooking tasty meals you’ve created or stumbled upon? Remember, living a healthy lifestyle is a journey and not a destination!

The actions you’re taking are turning into patterns. Your patterns will become habits, and your habits will become a lifestyle! Nutritious meals made at home are easier to prepare than you might think. Here’s a plant-based meal we’ve prepared a few times and are excited to share with you!

1 package of extra firm tofu, drained and pressed with a towel.
¼ cup of smooth peanut butter
1 tbsp roasted flaxseed from 
2 tbsp sesame oil
2 tbsp fresh ginger, peeled and grated
1 garlic clove, peeled
Pinch of black pepper
1 tbsp soy sauce 
1 tsp maple syrup
Juice of ½ lime 
2 tbsp water, and as needed
½ red onion
1 cup tomatoes
¼ cup of coriander

How to make it:

Cut tofu into 1/2" cubes. Add them to a hot skillet and sauté in avocado or olive oil for 5-7 minutes until golden brown on all sides. Set aside.

Add peanut butter, flaxseed, sesame oil, ginger, garlic, black pepper, soy sauce, maple syrup, lime juice, and water to the Vitamix container and secure the lid. Select Variable 1 and start the machine, slowly increase to its highest speed, and blend for 1 minute and set aside. Use what you have to blend the ingredients together into a smooth texture.

In a pot sauté red onions and tomatoes in avocado or olive oil for 2-3 minutes.

Add to the pot the cooked tofu and peanut sauce and toss until the tofu is thoroughly covered in the sauce. Add water as needed to stretch sauce and create a creamy consistency. Let cook on low for 3-4 minutes so that the sauce soaks in the tofu. Stir to avoid sticking to the bottom and sides of the pan.

Serve on top of brown rice or quinoa and garnish with coriander.
