Piña coladas are my happy vacation cocktail. And living in Southern Ontario this time of the year calls for some daydreaming— that I’m on a beach somewhere getting sun-kissed.

I know I’m not the only one wishing I could escape this winter cold. Well, you can, in your mind if you try my piña colada smoothie... mmmm, delish.

Great for breakfast or a snack. Loaded with protein -- in fact, manitobaharvest.com hemp hearts have 10 grams of plant-based protein per tablespoon. This recipe has no sugar or artificial flavours and is dairy-free!

2 cups of spinach
1/2 cup of oats
2 tbsp hemp hearts
1/2 ripe banana
1/2 cup of diced fresh ripe pineapple (if you can freeze them beforehand the better)
1 cup of organic coconut milk straight-from-the-can. You can either use the full-fat or light coconut milk, your choice
1 cup of crushed ice
1 cup of cold water
Lemon juice from 1/2 of a lemon

How to make it:

Blend ingredients in a blender. I used our Vitamix. Pour in a glass and garnish with chia seeds.
